NetBSD has had IPv6 NFS for quite some time, I think recent FreeBSD
also has it.

Our network runs IPv6 only, not running NAT-PT though. We use faith
(see faith(8)) with proxy DNS (totd). A somewhat outdated description
of our network can be found at:

We run mostly NetBSD (routers and clients) and NFS over IPv6 is
rock-solid on it.
